Originating from Martinique and Guadeloupe, colombo gets its name from the port of Colombo in Sri Lanka, where the spices that make up this magical blend come from. Brought by Indian laborers who arrived in the West Indies in the 19th century, colombo has transformed over time to become an essential classic of Creole gastronomy.
Today, I'm sharing the traditional recipe for chicken colombo, the one our Martinican grandmothers have been preparing for generations, with all my secrets for a fragrant, tender, and absolutely delicious dish! 😋

Colombo arrived in the West Indies with Indian indentured laborers after the abolition of slavery in 1848. They brought with them their culinary knowledge and spices. Colombo, a distant cousin of Indian curry, adapted to local West Indian produce: chicken, cabri (goat), local vegetables... Today, it has become a symbol of cultural métissage and a treasure of Creole gastronomy!
🛒 Ingredients for Chicken Colombo (4-6 servings)
For the marinated chicken:
- 1kg chicken (thighs and/or drumsticks, cut into pieces)
- 3 tablespoons colombo powder ⭐
- 3 crushed garlic cloves
- Juice of 1 lime
- Salt and pepper
For the sauce and vegetables:
- 2 medium onions, sliced
- 3 cloves garlic, minced
- 1 Antillean chili pepper (or sweet pepper, optional)
- 4 tablespoons oil
- 2 potatoes (medium, cut into large pieces)
- 1 eggplant (cut into large pieces)
- 1 zucchini (cut into large pieces)
- 1 christophine (chayote, optional, cut into pieces)
- 2 tomatoes (diced)
- 1 sachet of Antillean bouquet garni 🌿
- 50cl water or poultry broth
- Salt and pepper
To serve:
- Creole white rice (long grain rice)
- Kidney beans (optional)

Colombo powder is a spice blend that makes all the magic of this dish! It is generally composed of:
- Turmeric (which gives the golden yellow color)
- Coriander
- Cumin
- Mustard seeds
- Dried garlic
- Black pepper
- Chili pepper (depending on the version)
- Fenugreek (optional)

📝 Step-by-Step Chicken Colombo Preparation
Step 1: Marinate the chicken (30 min to 24h beforehand) ⏰
Marinating is ESSENTIAL for a flavorful colombo!
- In a large bowl, mix the chicken cut into pieces with 2 tablespoons of colombo powder
- Add the crushed garlic, the lime juice, salt and pepper
- Mix well to coat all chicken pieces

Cover and let marinate in the refrigerator:
- Minimum 30 minutes (if you're in a hurry)
- Ideally 2-3 hours
- Even better: overnight (24h) for maximum flavor!
💡 Chef's secret: The longer you marinate, the more fragrant and flavorful your colombo will be. Marinating allows the spices to penetrate deep into the meat!

Step 2: Brown the chicken 🔥
- In a large Dutch oven or heavy-bottomed pot, heat 4 tablespoons of oil over medium-high heat.
- Brown the marinated chicken pieces for 5-7 minutes on each side until well browned.
- Do not cook them completely, just sear them to create a nice golden crust.
- Remove the pieces and set them aside on a plate.
💡 Tip: Don't overcrowd the pot! Brown the chicken in batches if necessary for even browning.
Step 3: Prepare the aromatic base 🧅
- In the same pot (keep the oil and cooking juices, that's where the flavor is!), add the sliced onions
- Sauté them over medium heat for 5 minutes until they become translucent.
- Add the minced garlic and the whole chili (or cut in half if you like it spicier).
- Sauté for another 2 minutes, stirring.
- Add the remaining tablespoon of colombo powder and mix well for 1 minute to toast the spices (this releases their aromas!).

Step 4: Add the chicken and tomatoes 🍅
- Return the browned chicken pieces to the pot.
- Add the diced tomatoes
- Mix well to coat the chicken with the sauce.
- Cook for 5 minutes until the tomatoes begin to soften.
Step 5: Add the liquid and bouquet garni 💧
- Pour in 50cl of water (or chicken broth for even more flavor).
- Add the Antillean bouquet garni sachet
- Season with salt and pepper to taste (be careful, colombo powder already contains salt!).
- Bring to a boil, then reduce heat to a gentle simmer
- Cover and simmer for 30 minutes
💡 Tip: Stir occasionally to prevent sticking to the bottom.

Step 6: Add the vegetables 🥔🍆
- After 30 minutes of cooking, add the potatoes
- Cook for 10 minutes
- Then add the eggplant , zucchini and chayote (if using)
- Mix gently
- Simmer for another 15-20 minutes until all vegetables are tender and chicken is cooked through
💡 Why add vegetables in two stages? Potatoes take longer to cook than other vegetables. By adding them first, we ensure that all vegetables are cooked to perfection at the same time!
Step 7: Final adjustments 👨🍳
- Taste the sauce and adjust seasoning if necessary (salt, pepper, colombo)
- If the sauce is too thin: reduce uncovered for a few minutes
- If the sauce is too thick: add a little hot water
- Remove the bouquet garni and whole chili (if you left it whole)
- Let rest for 5 minutes off the heat before serving

Step 8: Serve the colombo 🍽️
- Serve hot in deep plates or bowls
- Serve with Creole white rice (long grain rice cooked in water)
- You can add red beans as a side dish
- Garnish with fresh chopped parsley (optional)
💡 My Chef Tips for a Perfect Colombo
🌟 For an even tastier colombo:
Prepare it the day before! Like all slow-cooked dishes, colombo is even better reheated the next day. The flavors have time to develop and harmonize.
🌟 For a thicker colombo:
Lightly mash a few cooked potato pieces with a fork in the sauce. This will naturally thicken the sauce!
🌟 For a more fragrant colombo:
Add 1 teaspoon of fresh grated turmeric or fresh ginger when sautéing the onions.
🌟 To control the spiciness:
Leave the chili whole in the preparation (it will add flavor without heat). If you like it spicy, cut it in half or into pieces!
🌟 For a last-minute colombo:
No time to marinate? Increase the amount of colombo in the sauce and add 1 teaspoon of soy sauce to compensate for the depth of flavor.
🌟 Storage:
Colombo can be stored for 3-4 days in the refrigerator in an airtight container. It also freezes very well for 3 months!
🔄 Colombo Variations
Goat Colombo 🐐
The traditional Martinique version! Replace the chicken with 1kg of goat meat, cut into pieces. Cooking time: 2 hours minimum for the meat to be tender.
Fish Colombo 🐟
Use 800g of firm-fleshed fish (tuna, shark, snapper) cut into large pieces. Reduce the cooking time to 20-25 minutes in total (add the fish only after the vegetables).
Shrimp Colombo 🦐
Replace with 600g of peeled large shrimp. Add them only 5 to 7 minutes before the end of cooking.
Vegetarian Colombo 🥕
Remove the chicken and add:
- Cooked chickpeas (400g)
- Firm tofu cut into cubes (200g)
- More vegetables: sweet potato, pumpkin, green beans
Pork Colombo 🐷
Use 1kg of pork (shoulder or neck) cut into pieces. Cooking time: 1h30-2h .
🍚 What to Serve with Colombo?
Traditional accompaniments
- Creole white rice : The classic accompaniment! Use long-grain rice (Basmati or Thai) cooked in water.
- Red beans : Served separately or mixed with rice
